Vegan tomato/basil soup

Vegan tomato basil soup

Now that winter is approaching and it is getting colder, a filled vegetable soup is an ideal meal. Nice and easy after a long day at work or after sports. Soup is easy to freeze and very healthy. For example, choose this vegan tomato basil soup. A little tip! Divide the soup into different bowls, so you can eat it several times. What Do You Need? - vegetable oil - 2 cans tomato paste - 400 ml sieved tomatoes - vegetable stock - 1 onion - 2 carrots - garlic - basil - spicy paprika - 4 tablespoons flour - half a can coconut milk How do you make it? Chop the onion and put it in a fairly large pan with some oil and a clove of garlic. Grate the carrots and add them together with some paprika. Let this cook for a while before adding the tomato puree to deacidify. Put the flour in the pan and let it cook for a while before pouring in the stock. The sieved tomatoes can also be added. Finally add the coconut milk and let it simmer for a while. Now pass this through a sieve, because all the pieces of onion and carrot should be removed. Put the soup in a pan for a while, add a handful of chopped basil and heat it up again. Place the soup in a bowl and finish with a little coconut milk.
