Chia pudding is super easy to make and incredibly tasty. You make it the night before and top it off the next day with toppings of your choice. With this easy recipe you can make a super healthy chia pudding for breakfast or as a snack.
Ingredients
- 120 g ripe raspberries, fresh or frozen - 3 tbsp grated coconut - 3 tbsp chia seeds - 1 scoop
Ekopura vegan protein
- 250 ml vegetable milk
How do you prepare it?
Place the raspberries in a bowl and mash with a fork. Stir in coconut, chia seeds and Ekopura protein through it. Pour over the milk and stir until everything is combined. Stir occasionally for the first 10 minutes to avoid lumps. Place in the fridge for at least 30 minutes, but preferably overnight. The pudding is ready when it is thick and jelly-like. Without toppings, the pudding will keep well closed in the fridge for a few days. Top it off with toppings of your choice. Dried fruit and fresh raspberries are delicious with it. Enjoy!
